I will be joined by master butcher Terry O'Hagan who will break down a side of beef, explaining the cuts and the flavours as he goes. You will learn how to select and cook a number of cuts, then taste-test some matched to great Australian craft beer.
You will learn how to prepare beef carpaccio, rubs for brisket and slow-cooking techniques and learn which is the best way to cook a steak: Heston's way of the MLA's way!
