Matt is hosting one of his most exciting dinners ever as he teams up with Chef Will Cowper to deliver a beer and food degustation rarely seen in Brisbane.

Will Cowper, head chef at the renowned Otto Ristaurante, Brisbane, has been let loose to create a five course modern Italian degustation to which Matt will pair some of the most interesting contemporary Australian craft beers from brewers such as Wildflower Brewing and Blending, Bridge Road Brewers, Revel Brewing and Balter Brewers.

With Will's focus on the best seasonal produce, the menu won't be finalised until closer to the event but the working menu looks like this:


  • Baccala, lime mayo
  • Onion rings, hop salt
  • Beer battered potato scallops

1st Course

Venison carpaccio, crème fraiche, grapes, coffee

2nd Course
Scallops, Jerusalem artichoke, black pudding, puffed barley, saba

3rd Course
Roasted potato gnocchi, braised duck, hop gremolata

4th Course
Porchetta, prunes, cauliflower, coffee jus

5th Course
Honey semifreddo, beer granita, citrus

About Chef Will Cowper

William Cowper is Head Chef at the newly opened OTTO Brisbane, sister restaurant to the iconic OTTO Sydney, which overlooks the Brisbane River to the Story Bridge.
